From Chloe's Kitchen Vol 2

ALMOND PATE
Serves 4

INGREDIENTS:

1 medium onion, minced
1 T butter
2 tsp total of a combination of chives, tarragon, savory, chervil/celery tops.(double for fresh herbs.)
1/2 tsp cumin
1 cup raw almonds, ground fine, but not to paste
1/2 cup toasted bread crumbs- whole wheat works great
2 Tbsp minced fresh parsley
1 tsp soy sauce
1 clove garlic, minced
1/2 cup mayo

INSTRUCTIONS:

1. Gently saute onion, herbs and cumin in butter until soft
2. Remove from heat and
3. When cool, combine with all other ingredients.
4. Form into a log or press into small serving dish and serve with crackers.
Note: Even better after a few days.
