The "simple" rule for vegetarian dinners is one bean dish with a starchy side - brown rice, barley, whole wheat, corn - makes a complete protein. Add a favorite side dish(es) or salad for a whole meal.
BEAN TIPS
1 can = 2 cups
1 lb = (3-4) 2 cup portions
Add 1-2 bay leaves per pound (lb) while cooking
Add salt to beans AFTER cooking to tenderness or they will not soften
Fresh beans are better than canned and a good way to avoid BPAs if frozen in glass bowls.
When making beans, make extra and freeze the rest in 2 cup portions, equal to 1 can, for a quick start to another meal.
