1 stalk celery
1 small onion, chopped
1 Tablespoon oil
1/4 teaspoon thyme
2 cups freshly cooked or 1 can black eyed peas
Salt
Pepper
INSTRUCTIONS:
1. In small saucepan, saute celery and onion until softened
2. Add thyme and quickly add beans and little bean broth
3. Simmer 5-10 minute
4. While simmering taste test and add salt, pepper to taste
