DUXELLES (Mushroom Spread)


INGREDIENTS:

8 oz mushrooms (button, cremini or shiitake), minced
3T butter
1 shallot or small onion, minced, about 1/2 c
1/4 t salt
1/4 t sugar
1/2 t soy sauce/tamari


INSTRUCTIONS:

1. Saute onions in a skillet in butter until clear.
2. Add everything else and cook over medium high until completely cooked.

Notes:
Can be refrigerated for up to a week, or frozen.
Great on eggs or toast, or eaten with crackers.
