1. Cook rice in a small pot using 1 1/2 c water- follow package directions, usu. 45-50 minutes
2. In a large skillet on medium high heat saute onion briefly in oil
3. Add carrots, stir and fry (2 minutes)
4. Remove to a plate
5. In same skillet scramble eggs, chopping into small pieces
6. Add onion/carrot mix, rice, peas, soy sauce
