From Chloe's Kitchen Volume 1 (revised)

(STIR) FRIED RICE DINNER
(Serves 2-4)

INGREDIENTS:

1/2 small onion, diced
2 carrots - diced
2/3 cups (before cooking) brown rice
2-4 Tablespoons oil
1/2 package frozen peas - cooked
4 eggs
2 Tablespoons Tamari (soy sauce)

INSTRUCTIONS:

1. Cook rice in a small pot using 1 1/2 c water- follow package directions, usu. 45-50 minutes
2. In a large skillet on medium high heat saute onion briefly in oil
3. Add carrots, stir and fry (2 minutes)
4. Remove to a plate
5. In same skillet scramble eggs, chopping into small pieces
6. Add onion/carrot mix, rice, peas, soy sauce
7. Toss
