1 cup lentils
1 leek
1 Tablespoon oil
1-2 teaspoons Better than Bouillon Vegetable Broth Base
INSTRUCTIONS:
1. Add lentils to 4 cups water and bring to a boil, lower heat and simmer (20-25 minutes)
2. Trim and discard tough darker green parts of leek.
3.Slice lengthwise, separate leaves and wash well to remove grit.
4.Stack and slice into 1/4 inch pieces
5. Heat oil in a skillet on medium, saute leeks until wilted- they will cook faster than onions.
6. Add cooked lentils, 1/2 cup cooking water, and stir in broth mix
7. Cook off some of the liquid (5-10 minutes)
Notes:
- Other vegetable broths or bullion cubes can be substituted
- Very tasty with brown rice or quinoa.
