LENTIL TACOS
Serves 3-4; approx 12 tacos

INGREDIENTS:

1 Taco Kit (12 shells, flavoring packet)
2/3 cup dried lentils
1 Tablespoon oil
Optional Extras: Cheese, lettuce, tomatoes, hot sauce, guacamole, sour cream, onions

INSTRUCTIONS:

1. Boil lentils in 2 1/3 cups water for 20-25 minutes until tender but not falling apart
2. Drain, reserving the broth
3. Follow instructions on taco kit, substituting the drained off lentil juice for the water and the lentils for the meat.
4. Add 1 Tablespoon oil.
