4 T oil
1 medium onion, chopped
1/4 c flour
3 1/2 c stock or (water with broth mix)
1 large potato, cubed
1 pack frozen lima beans
1/2 to 1 head broccoli, stem peeled and diced, tops chopped to 1/4-1/2" pieces
1/4 t thyme, garlic powder (or 1 clove minced)
ground pepper to taste
1/2 c frozen corn
1 c milk
4-8 oz shredded cheddar
pinch of dried mustard and cayenne (optional, intensifies the cheese flavor)
INSTRUCTIONS:
1. Cook onion in oil until onion turns clear.
2. Mix in flour then slowly add liquid while stirring constantly. Don't worry if there are some lumps.
3. Add potato cubes, bring to a boil then simmer for 5 minutes.
4. Add frozen limas, return to a simmer and cook for 5 minutes.
5. Add broccoli and spices and simmer for 10 minutes.
6. Add corn and milk, stir in most of the cheddar, reserving some for garnish. Check for salt and serve.
