LITTLE NUT COOKIES
INGREDIENTS:
1 stick butter
3/4 cup brown sugar, packed
1 egg
1 tsp vanilla
1/4 tsp salt
1 1/4 cups flour
1 cup finely chopped nuts (walnut, pecan, hazelnut, macadamia or toasted almonds
INSTRUCTIONS:
1. Preheat oven to 375
2. Cream softened butter and sugar until smooth
3. Beat in the egg, vanilla and salt
4. Stir in the flour then the nuts
5. Form into a log on wax paper, chill or freeze
6. Slice into thin rounds (~1/8 inch thick), place on baking sheet with a little space between each- they do not spread much
7. Bake 8-12 minutes, should look done and be just starting to color on the bottom and sides.
Notes:
Bake longer for a cripier cookie
Cookie log can remain frozen for a quick dessert option (especially if you forgot it's Tai Chi party night!)
