2 sticks butter, softened
1/2 cup powdered sugar, plus enough to coat cookies (2-4 cups)
2 teaspoons vanilla
2 cups unbleached flour
2 cups walnuts, chopped med-fine not powdered
INSTRUCTIONS:
1. Cream butter with 1/2 cup powdered sugar
2. Stir in vanilla
3. Stir in flour
4. Stir in walnuts
5. Heat oven to 350F
6. Form dough in to flat rounds
7. Bake until beginning to color (18-20 min)
8. Pour powdered sugar into a bag or bowl
9. Dredge several cookies at a time until coated
Notes:
- Cookies do not expand much during baking so form dough into the size of the cookie you want
- Using a rolling pin to roll the dough flat and and then using a shotglass or equivalent sized implement as a cookie cutter is a fast simple way to form the dough
